LUEGO DE 12-14 DÍAS (26-28ºC), SE REALIZA LA FERMENTACIÓN MALOLÁCTICA CON USO DE MICROFLORA NATIVA (60 DÍAS A 18ºC). LOS VINOS RESERVA SON CRIADOS EN BARRICAS DE MADERA DE ROBLE FRANCÉS Y AMERICANO DURANTE 10-12 MESES. ESTOS VINOS NO POSEEN TRATAMIENTOS PREVIO A LA EMBOTELLACIÓN Y HAN SIDO CRIADOS EN LA BOTELLA DURANTE 12-24 MESES. EL POTENCIAL DE GUARDA ES DE 15 AÑOS APROXIMADAMENTE Y LA TEMPERATURA DE SERVICIO RECOMENDADA ES DE 17-18ºC. ..AFTER HAND-PICKING THE GRAPE CLUSTERS IN 15-KILO CRATES, THEY ARE DE-STEMMED AND FERMENTED USING SACCHAROMYCES CEREVICIAE YEAST. AFTER 12-14 DAYS (26-28ºC), MALOLACTIC FERMENTATION IS CARRIED OUT WITH THE USE OF ENDEMIC MICROFLORA (60 DAYS AT 18ºC). THE RESERVE WINES ARE AGED IN FRENCH AND AMERICAN OAK BARRELS FOR 10-12 MONTHS. THESE WINES DO NOT UNDERGO ANY PROCESSING PRIOR TO BOTTLING, AND THEY HAVE BEEN AGED FOR APPROXIMATELY 12-24 MONTHS. AGING POTENTIAL IS 15 YEARS AND THE RECOMMENDED SERVING TEMPERATURE IS 17-18ºC.
